i think it's like about a person you really loved but she/he wasn't "the 1" for you.

"But it would've been fun, If you would've been the one" that means, turns out that the person you really loved wasn't the one for you, but you wished that she/he was the one for you.
taylor said folklore is an album about a teenage love triangle. the characters are betty, James and Augustine. (search for more details ahout this love triangle) so this "love triangle" is just a story made by taylor and it wasn'r based irl. and i think the 1 is Augustine's POV. -
I think this song is about the relationship taylor had with Harry. She says that she's okay and she's somehow moved on even though it was hard for here (if you never bleed you're never gonna grow and it's alright) then she starts to reminisce about the good times she had (but we were something don't you think so.... But it would have been fun if you would have been the one)
